Lemon Brownies
Ingredients
Batter
granulated sugar

lemon (zest)

Lemon Glaze
powdered sugar

lemon (juice)

Instructions
Preheat oven
Preheat oven to 175°C.
Prepare baking pan
Line a baking pan with parchment paper.
Melt butter
Melt the butter and let it cool slightly.
Rub lemon zest into sugar
Rub the lemon zest into the granulated sugar.
Mix sugar mixture
Add the melted butter to the sugar and mix well for about 1 minute.
Add eggs and lemon juice
Whisk in eggs and lemon juice until glossy.
Fold in dry ingredients
Fold in flour, salt, and baking powder until just combined.
Spread batter
Spread the batter evenly into the prepared pan.
Bake brownies
Bake for 20–25 minutes, until the edges are set and a toothpick inserted in the center comes out mostly clean.
Make lemon glaze
In a small mixing bowl combine the lemon juice and powdered sugar. Whisk together until smooth. If the glaze seems too thick, add a teaspoon of lemon juice to thin it out.
Glaze and serve
Pour the glaze over the cooled brownies, spreading evenly to the edges. Allow the glaze to set completely before slicing and serving.
