Biscoff cookies (chopped)

Instructions
Preheat oven
Preheat oven to 180°C (160°C fan) and line a baking tray with parchment paper.
Cream butter and sugars
Cream butter and both sugars together until light and fluffy.
Add egg and vanilla
Mix in the egg and vanilla until fully combined.
Whisk dry ingredients
In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients.
Fold in chocolate and Biscoff
Gently fold in chocolate and crushed biscoff until evenly distributed.
Scoop and shape cookies
Scoop dough onto the tray (1–2 tbsp per cookie), leaving space between each. Press extra chocolate and Biscoff on top.
Bake cookies
Bake for 8–12 minutes, until edges are lightly golden and centers are still soft. Drizzle melted Biscoff spread on top and add a Biscoff cookie for decoration.
Cool cookies
Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
