Instructions
Marinate the chicken
Place chicken pieces in a bowl and cover with buttermilk. Let marinate for at least 1 hour or overnight in the refrigerator.
Prepare the seasoned flour
In a large bowl, mix flour, cornstarch, salt, black pepper, paprika, garlic powder, onion powder, thyme, basil, oregano, celery salt, white pepper, mustard powder, and ground ginger.
Coat the chicken
Remove chicken from buttermilk and dredge each piece thoroughly in the seasoned flour mixture, pressing to adhere.
Heat the oil
Pour sunflower oil into a deep pot or wok and heat to 175°C for frying.
Fry the chicken
Fry chicken pieces in batches for 12-15 minutes until golden brown and cooked through (internal temperature 75°C).
Rest and serve
Drain fried chicken on a wire rack or paper towels for 5 minutes before serving.
