One-Pan Lasagna with Dill and Chorizo

Instructions
Fry the chorizo
Heat a pan over medium heat and fry the chorizo until golden brown.
Sauté the onion
Remove chorizo from the pan and sauté the chopped red onion in the remaining oil until soft.
Add lasagna ingredients and simmer
Add tomato passata, grilled peppers, mascarpone, water, and lasagna sheets. Stir well. Increase heat to bring to a simmer and cook for 15 minutes, stirring regularly.
Melt the cheese
Add grated cheese and cover the pan. Let the cheese melt completely.
Prepare dill dressing
Mix chopped dill with lemon juice, zest, and olive oil.
Finish and serve
Top the lasagna with the dill mixture and reserved chorizo. Serve immediately.
