Fudgy Brownies with Crinkled Tops

Instructions
Prepare pan and preheat oven
Line an 20×20 cm baking pan with parchment paper and lightly brush with butter. Preheat the oven to 176°C.
Melt butter
Melt butter in the microwave or on the stove until completely liquid.
Whisk eggs and sugar
In a large bowl, whisk together the eggs, white sugar, brown sugar and vanilla extract until the sugar is 80-90% dissolved and the mixture looks glossy.
Combine dry ingredients
In a separate bowl, whisk together flour, cocoa powder and salt.
Combine wet and dry ingredients
Pour the melted butter into the egg-sugar mixture, then gently fold in the dry ingredients. Stop mixing as soon as no dry flour remains.
Bake brownies
Pour the batter into the prepared pan and bake for 25–28 minutes until the edges are set but the center still looks slightly underdone.
Cool completely
Remove the pan from the oven and let the brownies cool completely in the pan for at least 30 minutes before cutting.
Cut and serve
Lift the cooled brownies out using the parchment paper and cut into 9 squares. Serve at room temperature.
