Instructions
Prepare the chicken
Cut chicken breast into even strips, season lightly.
Make the buttermilk batter
Whisk buttermilk with eggs and spices for the wet coating.
Prepare the seasoned flour mix
Combine flour, cornstarch and spices in a shallow bowl.
Coat the chicken tenders
Dip each strip in wet batter, then dredge in seasoned flour; repeat for extra crunch.
Fry the tenders
Deep-fry chicken in hot oil at 175°C until golden and 74°C internal temperature.
Prepare the Nashville hot oil
Carefully ladle 120 ml of the hot frying oil into a bowl with cayenne, sugar and spices; stir until dissolved.
Toss tenders in hot oil
Brush or toss the fried tenders in the spicy oil for signature heat and glossy finish.
Serve immediately
Plate the tenders hot with pickles and white bread for classic Nashville experience.
