Instructions
Cream butter and sugar
Beat the softened butter and sugar until light and fluffy.
Add egg and lemon
Mix in the egg, lemon zest, and lemon juice until combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
Chill the dough
Cover and refrigerate the dough for 30 minutes.
Preheat oven
Preheat the oven to 175°C.
Shape and roll cookies
Scoop dough, roll into balls, then roll in sugar.
Bake the cookies
Place cookies on a baking sheet and bake for 9-11 minutes until edges are lightly golden.
Cool and serve
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
