Instructions

Prepare vegetables

Dice onion, mince garlic, slice bell pepper and shred cabbage and carrot.

Cook the meat filling

Sauté onion and garlic, then add ground beef and cook until browned. Add bell pepper, gochujang, soy sauce, sesame oil and brown sugar.

Warm the tortillas

Heat corn tortillas on a dry pan or directly over a gas flame until soft and lightly charred.

Assemble tacos

Fill each tortilla with the Korean beef mixture, top with shredded cabbage and carrot slaw, sliced green onions and sesame seeds.

Storage

Fridge: 2 days
Freezer: 30 days
Reheat: Microwave 1-2 minutes or reheat in pan
