Instructions
Roast aromatics
Heat oil in a pan. Add peanuts, green chillies, garlic, and coriander seeds. Roast until fragrant and lightly golden.
Blend the spice mix
Transfer roasted ingredients to a blender, add the dry grated coconut, and blend into a coarse powder.
Sauté aromatics and onions
In the same pan, add the mustard seeds, cumin, and curry leaves. Once they splutter, add the sliced onions and sauté until soft and lightly golden.
Combine with peanut mixture
Add the prepared peanut mixture, red chilli powder, turmeric, and salt. Mix well and cook for about a minute until everything comes together.
Mix into yogurt
Let the onion mixture cool slightly, then add it to the Greek yogurt. Mix until well combined.
Serve
Serve with hot rice, chapati, or roti.
