Easy Fudgy Crackly Top Brownies

light brown sugar

Instructions
Whisk eggs and sugars
In a bowl, whisk the eggs, egg yolk, powdered sugar and brown sugar vigorously for about 2 minutes until smooth and the powdered sugar has completely dissolved.
Add butter, oil and coffee
Add the melted butter, oil, and coffee powder. Whisk until well combined.
Fold in dry ingredients
Add the flour, cocoa powder, and chocolate chips and fold gently using a spatula. Do not overmix.
Bake the brownies
Transfer the brownie batter to a parchment lined 8x8 pan and bake in a 180°C preheated oven for 25-30 minutes or until edges are set and center still looks a little soft.
Cool completely
Cool completely before slicing. For best texture, chill in the fridge for 2-3 hours.
