Instructions
Prepare chicken
Slice chicken breasts horizontally into thin cutlets.
Make marinade
Whisk together milk, pickle juice, and egg in a bowl.
Marinate chicken
Place chicken cutlets in marinade and refrigerate for 15 minutes.
Mix breading
Combine flour, cornstarch, salt, pepper, garlic powder, paprika, onion powder, and sugar in a shallow dish.
Bread chicken
Remove chicken from marinade and dredge each piece in the flour mixture, pressing to coat thoroughly.
Heat oil
Heat peanut oil in a deep skillet or pot to 175°C.
Fry chicken
Fry chicken cutlets in batches for 3-4 minutes per side until golden brown and internal temperature reaches 75°C.
Toast buns
Toast the brioche buns in a dry pan or toaster until lightly golden.
Assemble sandwiches
Place fried chicken on toasted buns and top with 3 pickle slices each.
