Slice the potatoes

Using a mandoline, slice the potatoes very thin and arrange them in a single layer in an oven-safe baking dish.

Cook bacon and onion

In a skillet over medium heat, cook the chopped bacon and onion with salt and pepper until the bacon is crispy and the onion is softened.

Add cream and cheese

Pour the cream over the bacon-onion mixture and stir in half of the shredded mozzarella until everything is combined and slightly thickened.
