Potato Gratin with Bacon

Instructions
Slice the potatoes
Using a mandoline, slice the potatoes very thin and arrange them in a single layer in an oven-safe baking dish.
Cook bacon and onion
In a skillet over medium heat, cook the chopped bacon and onion with salt and pepper until the bacon is crispy and the onion is softened.
Add cream and cheese
Pour the cream over the bacon-onion mixture and stir in half of the shredded mozzarella until everything is combined and slightly thickened.
Assemble and top with cheese
Pour the bacon-cream mixture evenly over the sliced potatoes. Sprinkle the remaining mozzarella cheese on top.
Bake the gratin
Place the baking dish in a preheated oven at 200°C and bake for 20-30 minutes until the potatoes are tender and the top is golden and bubbling.
Serve and enjoy
Remove from the oven and let rest for a few minutes before serving hot.
