Clown Hand Pies

Dough
all-purpose flour (sifted)

butter (cold, cubed)

ice water (cold)

granulated sugar

Filling
apple (peeled, cored, diced)
400 g
granulated sugar
60 g
ground cinnamon

lemon juice
15 ml
Topping
egg (beaten)
1 piece
granulated sugar (coarse)

Instructions
Make the pie dough
Combine flour, sugar and salt, then cut in cold butter until mixture resembles coarse crumbs.
Add ice water
Gradually add ice water, mixing until dough just comes together.
Chill the dough
Wrap dough in plastic and refrigerate for 30 minutes.
Prepare apple filling
Mix diced apples with sugar, cinnamon and lemon juice.
Roll out dough
Roll chilled dough to 3mm thickness on floured surface.
Cut hand pie shapes
Cut dough into 10cm circles or squares for hand pies.
Fill the pies
Place 2 tablespoons of filling on half of each dough piece, leaving 1cm border.
Seal and crimp
Fold dough over filling, crimp edges with fork, and cut small steam vents.
Apply egg wash
Brush tops with beaten egg and sprinkle with coarse sugar.
Bake the hand pies
Bake at 200°C for 25-30 minutes until golden brown.
Cool before serving
Let hand pies cool on wire rack for 10 minutes before serving.

Store in airtight container. Reheat from frozen without thawing.
