Instructions
Prepare the egg mixture
Crack the eggs into a bowl and whisk until well combined.
Season the mixture
Add shiro dashi, mirin, and sugar to the beaten eggs and mix until the sugar dissolves.
Cook the tamagoyaki
Heat a square pan on low heat. Pour a thin layer of egg mixture, let it set slightly, then fold it towards the handle. Add more mixture and repeat folding away from you to create layers.
Slice and serve
Remove the cooked tamagoyaki from the pan and slice into bite-sized pieces.
