Preheat oven

Heat oven to 175°C and line your baking pan with parchment paper.

Melt butter

Melt the butter and let it cool slightly.

Prepare lemon sugar

Rub the lemon zest into the sugar until fragrant.

Use only the yellow part of the zest to avoid bitterness

Mix wet ingredients

Whisk in the melted butter for about 1 minute.

Add eggs and lemon juice

Add the eggs and lemon juice and whisk until smooth and glossy.

Fold in dry ingredients

Fold in the flour, salt and baking powder just until combined.

Spread batter

Spread the batter evenly in the prepared pan.

Bake for 20–25 minutes, until the edges are set and a toothpick comes out mostly clean.

Prepare lemon glaze

Mix the powdered sugar with the lemon juice until smooth. Pour over the cooled brownies and spread evenly.
