Instructions
Preheat oven
Preheat your oven to 180°C and line two baking sheets with parchment paper.
Cream butter and sugars
In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Add cookie pieces and chips
Fold in the crushed chocolate sandwich cookies and white chocolate chips.
Scoop cookies
Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them 5 cm apart.
Chill dough
Refrigerate the scooped cookies for 8 minutes to prevent spreading.
Bake cookies
Bake for 10-12 minutes until edges are golden but centers are still soft.
Cool cookies
Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
