Banana Chocolate Chip Cookies

Instructions
Cream the butter and sugars
In a large mixing bowl, add the cold cubed butter and whisk until slightly creamy. Add the caster sugar and light brown sugar, then whisk together until well combined and fluffy.
Add wet ingredients
Add the egg, vanilla extract, mashed banana and chocolate chunks. Whisk until fully incorporated.
Add dry ingredients
Add the flour, baking powder, baking soda, cinnamon powder, instant coffee and salt. Gently mix until just combined, do not overmix.
Chill the dough
Place the cookie dough balls onto a tray and freeze for at least 1 hour or overnight for best results.
Bake the cookies
Preheat oven to 175-180°C. Bake for 10-15 minutes or until the tops are lightly golden while the centres remain soft.
Cool and serve
Remove from the oven and let it cool and set. Serve warm with ice cream.
