Instructions
Preheat oven
Preheat oven to 175°C and prepare baking sheet with parchment paper.
Mix batter
In a large bowl, combine powdered sugar, cocoa powder, salt, egg whites, instant coffee, and vanilla bean paste. Stir until a thick glossy batter forms.
Fold in chocolate chips
Gently fold chocolate chips into the batter if using.
Scoop cookies
Scoop 2-3 tablespoons of batter per cookie onto prepared baking sheet. Space cookies 10-13 cm apart as they spread significantly.
Bake cookies
Bake in the center of the oven for 8-10 minutes. 8 minutes yields very fudgy cookies; 10 minutes is the maximum for less fudgy texture.
Shape cookies
Immediately after baking, use a round bowl to gently scoot and round out the cookies while still warm.
Cool cookies
Transfer shaped cookies from hot baking sheet to a cooling rack. Let cool completely before eating.
