Preheat oven to 175°C and prepare baking sheet with parchment paper.

Mix batter

In a large bowl, combine powdered sugar, cocoa powder, salt, egg whites, instant coffee, and vanilla bean paste. Stir until a thick glossy batter forms.

Fold in chocolate chips

Gently fold chocolate chips into the batter if using.

Scoop 2-3 tablespoons of batter per cookie onto prepared baking sheet. Space cookies 10-13 cm apart as they spread significantly.
