450 g
jalapeño salt

Instructions
Slice jalapeños
Use a mandolin to thinly slice the jalapeños and set them aside. Cut the pineapple into rings if not already prepared.
Caramelize pineapple rings
Heat a griddle or skillet over medium heat. Add olive oil and place pineapple rings on the surface. Cook for 2 minutes, then flip, brush with BBQ sauce and cook for 90 seconds. Flip again for 10-15 seconds to caramelize the sauce.
Cook smashburgers
Place beef balls on the hot griddle. Top each with sliced jalapeños and smash them flat. Season with jalapeño salt and cook for 2 minutes. Flip carefully, top with jalapeño cheese and cook until melted.
Assemble burgers
Steam pretzel buns. Spread BBQ sauce on bottom bun. Add two smash patties, pineapple rings, pickled chiles, more BBQ sauce, and top with the bun.
Storage
Best enjoyed fresh. Patties can be cooked ahead and reheated.
