Slice jalapeños

Use a mandolin to thinly slice the jalapeños and set them aside. Cut the pineapple into rings if not already prepared.

Caramelize pineapple rings

Heat a griddle or skillet over medium heat. Add olive oil and place pineapple rings on the surface. Cook for 2 minutes, then flip, brush with BBQ sauce and cook for 90 seconds. Flip again for 10-15 seconds to caramelize the sauce.

Place beef balls on the hot griddle. Top each with sliced jalapeños and smash them flat. Season with jalapeño salt and cook for 2 minutes. Flip carefully, top with jalapeño cheese and cook until melted.
