Prepare the rice

Rinse the basmati rice under cold water until the water runs clear. Soak in water for 15 minutes, then drain.

Heat the oil and spices

Heat oil in a heavy-bottomed pot over medium heat. Add cumin seeds, bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté until fragrant, about 30 seconds.

Sauté the aromatics

Add the sliced onion and sauté until golden brown, about 4-5 minutes. Add minced garlic, ginger, and slit green chilies. Cook for another minute until fragrant.

Add tomatoes and spices

Add the chopped tomatoes, turmeric, red chili powder, garam masala, and salt. Cook until the tomatoes are soft and the oil separates, about 4-5 minutes.

Cook the rice

Add the drained rice to the pot and gently stir to coat with the tomato masala. Add water, chopped cilantro, and mint. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Turn off the heat and let the rice rest, covered, for 5 minutes. Fluff gently with a fork and serve hot.
