Prepare the cucumbers

Wash cucumbers and cut them into long spiral ribbons using a spiralizer or knife.

In a small bowl, combine minced garlic, chili pepper, sesame oil, rice vinegar, soy sauce and sugar. Mix until sugar dissolves.
