Baking Soda Bath

Instructions
Activate yeast
Mix warm water, yeast and sugar in a bowl to activate the yeast.
Form the dough
Add flour, salt and olive oil to the yeast mixture. Mix until a soft, non-sticky dough forms.
First rise
Cover the bowl and let the dough rise in a warm place until doubled in size.
Divide the dough
Lightly flour the work surface and divide the dough into 3 equal pieces.
Shape ropes
Roll each piece into a long rope of even thickness.
Rest the ropes
Allow the shaped ropes to rest briefly before dipping.
Prepare baking soda bath
Mix very hot water with baking soda and salt to create the alkaline bath.
Dip ropes
Briefly dip each rope into the hot baking soda bath for 30–60 seconds, then drain on a rack.
Cut into bites
Use scissors to cut the dipped ropes into bite-sized pieces.
Season
Sprinkle the pretzel bites with coarse salt while still damp.
Bake
Bake the pretzel bites at 250°C for about 15 minutes until deep golden brown.
Finish and serve
While still hot, brush the bites with melted butter and serve immediately.
