Prepare the cilantro lime sauce

In a bowl, mix sour cream, juice of 1 lime, chopped cilantro, and a pinch of salt until smooth. Set aside in the fridge.

Cook the beef filling

Finely chop onion and garlic. Heat a pan over medium heat, add a little oil, sauté onion and garlic until soft (2-3 minutes). Add ground beef, break it up, and cook until browned. Add taco seasoning, cheese, and salt. Stir until cheese melts and everything is combined. Remove from heat.

Fry the tortillas

Heat oil in a separate pan over medium-high heat. Quickly fry each tortilla for 10-15 seconds per side until crispy and golden. Drain on paper towels.
