Instructions
Prep the vegetables
Wash and dice the vegetables into small, even pieces so they cook quickly and evenly.
Build the base
Heat the oil in a pot and sauté the onion, carrot, bell pepper, and garlic until fragrant and lightly softened.
Simmer the soup
Add the broth, tomato, salt, and black pepper, then simmer until the vegetables are tender and the flavors meld.
Cook the noodles
Add the rice noodles to the simmering soup and cook just until tender, stirring gently to separate them.

Storage
