Red Velvet Cookies with Cream Cheese Frosting

Cream Cheese Frosting

granulated sugar
80 g
whipping cream
120 g
vanilla extract

Instructions
Mix butter and sugars
In a large bowl combine the softened butter with the granulated sugar and the light brown sugar.
Add eggs and vanilla
Mix in the egg, egg yolk and vanilla extract.
Add vinegar and food coloring
Add the vinegar along with the red food coloring and mix until combined.
Add dry ingredients
Add the baking soda, flour and cocoa powder. Fold until just combined.
Shape and freeze cookies
Scoop out 10 equal cookies onto a baking tray lined with parchment paper. Freeze for 30 minutes.
Preheat oven
Preheat your oven to 180°C (fan assisted).
Bake cookies
Place the frozen cookies onto a large tray lined with parchment paper, leaving some space between them. Bake for 12 minutes.
Cool cookies
Once ready, let them cool before frosting.
Make frosting - mix cream cheese and sugar
For the frosting combine the cream cheese with the sugar until smooth.
Finish frosting
Add the whipping cream along with the vanilla and mix until fluffy and holds its shape.
Frost and serve
Frost the cookies and enjoy!
