Preheat oven

Preheat the oven to 175°C.

Prepare apples

Slice the apples thinly with a mandoline and marinate with sugar, speculaas spice and lemon juice.

Make the crust dough

Knead all crust ingredients together until a dough ball forms.

Roll out and chill the crust

Roll out the dough, cut to fit your tart pan, prick holes in the base and refrigerate.

Make the frangipane

Mix all frangipane ingredients in a food processor until smooth.

Assemble the tart

Remove the crust from the fridge, pipe or spread the frangipane into the base and arrange the marinated apple slices on top.

Bake the tart

Bake at 175°C for 60 minutes until golden brown.

Warm the apricot jam and brush it over the warm tart.
