Instructions

Cook the pasta

Bring a large pot of salted water to a boil and cook the noodles according to package instructions. Reserve 1/2 cup pasta water for later use.

Sauté aromatics

In a large pan, heat olive oil over medium heat. Add shallots and cook for 2-3 minutes until soft, then add garlic and cook for another 30 seconds.

Build the sauce base

Add red pepper flakes and tomato paste. Cook for 1 minute, then add water and cook for 3-4 minutes, stirring constantly until the mixture becomes deep red.

Create the creamy sauce

Lower heat and add heavy cream, stirring until smooth. Add parmesan cheese and stir well. Taste and adjust salt and red pepper flakes as needed.

Combine pasta with sauce

Add the cooked noodles directly into the sauce. Add a little pasta water if needed to adjust consistency. Toss well to coat the pasta evenly.
