Instructions
Brown the butter
Brown the butter until it has a nutty aroma and golden color.
Mix with sugars
While the butter is still very warm, pour it directly over the brown sugar and granulated sugar. Whisk until smooth and glossy.
Cool the mixture
Let the mixture cool for 1–2 minutes.
Add egg and vanilla
Whisk in the egg and vanilla until fully combined.
Add dry ingredients
Fold in the flour, baking soda, and salt until just combined.
Add chocolate chips
Fold in the chocolate chips and chunks.
Shape the cookies
Scoop about 3–4 oz of dough per cookie and flatten each piece slightly.
Assemble the s'mores cookies
Place a piece of graham cracker, dark chocolate, and a marshmallow on the baking sheet and place the flattened cookie dough over top, leave a small hole in the top so the marshmallow can seep through.
Bake the cookies
Bake at 175°C for about 12–15 minutes, or until the edges are golden and the centers are still soft.
Spread marshmallow
While the cookies are still warm, gently spread the marshmallow apart around the opening if it hasn't spread as much as you'd like.
Draw ghost faces
Use an edible food-safe marker to draw a little ghost face onto each marshmallow.
Final assembly
Place a decorated marshmallow on top of each warm cookie.
