Melt Chocolate & Butter

Melt the dark chocolate and butter together until smooth and glossy.

Aerate the Sugars

Add caster sugar and brown sugar. Whisk for 2–3 minutes until glossy and slightly lighter.

Add Wet Ingredients

Whisk in condensed milk, milk and vanilla until smooth.

Add Dry Ingredients

Sift in flour, cocoa powder, cornstarch, baking powder, baking soda and salt. Fold gently until just combined. Do not overmix.

Stop mixing as soon as you no longer see dry streaks

Add Chocolate Chips

Fold in the chocolate chips. The batter should be thick, glossy and brownie-like.

Pipe the Fries

Preheat oven to 175°C. Transfer batter to a piping bag and pipe long strips about 1.5–2 cm wide onto a parchment-lined tray, leaving space between each strip. Top with extra chocolate chips if desired.

Bake

Bake for 10–13 minutes until the fries have shiny crackly tops, set edges and soft fudgy centres.

Shape While Hot

Immediately after baking, use a bench scraper, offset spatula or spoon to gently push the sides inward and straighten the edges into fry shapes. Allow to cool completely before lifting.
