Prepare the vegetables

Dice the red bell pepper, red onion, avocado and pineapple into small cubes.

Juice the limes

Squeeze the juice from 5 limes into a bowl.

Marinate the shrimp

Add the shrimp to the lime juice and let them marinate for 5 minutes. The acidity will cook the shrimp.

Combine all ingredients

Add the diced vegetables, pineapple and coriander to the shrimp. Gently mix everything together.

Serve the ceviche chilled, straight from the fridge or with ice cubes to keep it fresh.
