Instructions

Caramelize the onions

Heat butter and oil in a pan over medium-low heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, for 25–35 minutes until deeply golden and jammy.

Prepare the special sauce

In a bowl, combine mayonnaise, ketchup, relish, vinegar, Worcestershire, sugar, black pepper, garlic powder, and 2 tbsp of the caramelized onions. Mix until smooth and refrigerate for at least 30 minutes.

Prepare the beef patties

Divide ground beef into 2–3 oz portions and roll into loose balls. Do not season yet.

Heat the griddle

Heat a griddle or heavy skillet over high heat. Lightly oil the surface.

Smash and cook the patties

Place beef balls onto the hot surface and immediately smash thin using a spatula. Season with salt and pepper. Cook for 1–2 minutes until the edges are crispy.

Add cheese and finish cooking

Flip the patties, add American cheese, and cook another 30–60 seconds until melted.

Stack the double cheeseburgers

Stack two patties together to form each double cheeseburger.

Butter the cut sides of the buns and toast on the griddle until golden.

Spread sauce on the bottom bun. Add pickles, shredded lettuce, and tomato slices. Place the double patties on top, followed by extra caramelized onions.
