Make cherry sauce

Defrost cherries. In a small pot combine cherries, sugar, balsamic vinegar and rosemary sprig. Bring to boil on medium heat and simmer 10-12 minutes until thick. Remove rosemary, let sauce cool.

Prepare burger patties

Pass beef and beef fat through a meat grinder or finely chop with blender. Add grated blue cheese, salt and black pepper. Mix well and form 2 flat patties about 2 cm thick.

For juiciness, use ground meat with 20-25% fat. Do not over-grind the meat too finely

Fry the patties

Heat a skillet with a little oil on high heat. Cook patties 4-5 minutes per side until crust forms. Internal temperature should reach 63°C. Let patties rest 3 minutes.

Prepare the buns

Slice buns in half and lightly toast cut side down on the skillet for 1-2 minutes until crispy.

Assemble burgers

Spread cream cheese on the bottom bun. Add arugula, then the patty, top with cherry sauce. Cover with top bun.

Reheat: Microwave 1-2 minutes
