Prepare the chicken

Cut chicken breast into bite-sized cubes and season with salt and black pepper.

Caramelize the onions

Heat olive oil and butter in a large pan over medium heat. Add sliced onions and cook slowly, stirring occasionally, until deeply caramelized and golden brown, about 20-25 minutes.

Cook the chicken

Push onions to the side of the pan, add seasoned chicken cubes and sear until golden on all sides, about 6-8 minutes.

Add minced garlic, chili flakes, and chili oil to the pan. Stir and cook for 1 minute until fragrant.

While the sauce simmers, cook pasta in salted boiling water according to package directions until al dente. Drain and reserve 1 cup pasta water.

Add heavy cream to the pan with chicken and onions. Bring to a gentle simmer, then add grated parmesan and stir until melted. Add pasta and toss to combine. If sauce is too thick, add reserved pasta water gradually.
