Shakshuka
Eggs poached in a spicy tomato sauce with plenty of fresh herbs.
A vibrant skillet of eggs gently cooked in a rich tomato-pepper sauce, finished with fresh cilantro and parsley. Comforting, savory, and perfect with bread for scooping.

Instructions
Build the tomato base
Heat the oil and cook the onion, bell pepper, and chili until softened and fragrant.
Add tomatoes and season
Stir in the garlic, tomatoes, tomato sauce, salt, and black pepper, then simmer until the sauce thickens slightly.
Poach the eggs in the sauce
Make four small wells in the sauce, crack in the eggs, cover, and cook until the whites are set but the yolks are still soft.
Finish and serve
Scatter the fresh herbs over the top and serve hot straight from the pan.
Storage
Best eaten fresh. If storing, cool quickly and keep the herbs separate if possible.
