Ingredients

Instructions

Build the tomato base

Heat the oil and cook the onion, bell pepper, and chili until softened and fragrant.

The onion should look translucent and the pepper slightly tender, not browned heavily.

Add tomatoes and season

Stir in the garlic, tomatoes, tomato sauce, salt, and black pepper, then simmer until the sauce thickens slightly.

Simmer uncovered so excess moisture can evaporate and the sauce becomes richer.

Poach the eggs in the sauce

Make four small wells in the sauce, crack in the eggs, cover, and cook until the whites are set but the yolks are still soft.

For runny yolks, start checking at 5 minutes; for firmer yolks, cook a little longer.

Finish and serve

Scatter the fresh herbs over the top and serve hot straight from the pan.

Reheat: Microwave 1-2 minutes or reheat gently in a pan over low heat.

Best eaten fresh. If storing, cool quickly and keep the herbs separate if possible.
