Loaded Parmesan Fries with Italian-Style Queso Sauce

Instructions
Prepare and season the fries
Peel and cut the potatoes into uniform fries, then toss with olive oil and salt.
Bake the fries
Spread the fries in a single layer on a baking sheet and bake until golden and crispy.
Make the queso sauce base
Melt butter in a saucepan, whisk in flour to make a roux, then gradually add milk while stirring.
Finish the sauce
Add grated parmesan and minced garlic to the sauce, stirring until melted and smooth. Optionally stir in mozzarella for extra creaminess.
Assemble and serve
Place the crispy fries on a serving plate, drizzle generously with the warm queso sauce, and serve immediately.
Storage
