Equipment
Ingredients
Ingredients
potato (boiled, mashed)
500 g
whole wheat flour
400 g
salt
5 g
red chili powder
5 g
coriander powder
5 g
cumin seeds
5 g
turmeric
2 g
water
180 ml
sunflower oil
500 ml
Instructions
Mash the potatoes
Mash the boiled potatoes well to avoid lumps and achieve a soft, dough-like texture.
Mix dry ingredients
In a large bowl combine whole wheat flour, salt, red chili powder, coriander powder, cumin seeds and turmeric.
Knead the dough
Add the mashed potatoes to the flour mixture and gradually add water while kneading to form a firm, smooth dough.
Divide the dough
Divide the dough into 15 equal portions and shape each portion into a smooth ball.
Roll the pooris
On a lightly floured surface, roll each ball into a small disc about 10 cm in diameter, keeping the thickness even.
Heat the oil
Heat sunflower oil in a deep frying pan or wok over medium-high heat until it reaches 180-190 °C.
Fry the pooris
Gently slide one poori at a time into the hot oil. Press lightly with a slotted spoon to help it puff. Fry until golden brown on both sides, about 30-45 seconds per side.
Drain and serve
Remove the fried pooris with a slotted spoon and drain on paper towels. Serve hot with curry or chutney.
