Mini Cherry Tomato Tarte Tatin
These bite-sized cherry tomato tarte Tatins are quick, elegant appetizers that disappear fast at any gathering. Golden puff pastry tops sweet roasted tomatoes, finished with creamy burrata and fresh basil.

cherry tomatoes (halved)

egg yolk

Serving
burrata
1 ball
basil
3 leaves
Instructions
Prepare the base
Drizzle honey, balsamic vinegar and olive oil in small circles on a baking tray. Season with salt and thyme.
Arrange tomatoes
Cut cherry tomatoes in half and place them cut-side down on the prepared circles.
Top with pastry
Cover each tomato circle with a round of puff pastry and brush with egg yolk.
Bake the tartes
Bake for about 20 minutes at 200°C until the pastry is golden and puffed.
Serve
Carefully flip each tarte over. Serve warm topped with fresh burrata and basil leaves.

Best eaten fresh. Reheat in oven to restore crispness. Burrata should be added fresh after reheating.
