Brown the butter

Add butter to a saucepan over medium heat. Stir often until it melts, foams, sizzles, then turns golden with a nutty smell.

Cool the browned butter

Once browned, pour the butter into a bowl and place in the freezer for 5 minutes. It should be warm, not hot.

Mash bananas and mix wet ingredients

In a large bowl, mash bananas until mostly smooth. Add 1/2 cup of the browned butter, brown sugar, white sugar, egg, and vanilla. Whisk for 1 to 2 minutes until glossy.

Add flour, baking soda, baking powder, salt, and cinnamon. Mix very thoroughly until no dry flour remains and everything is evenly distributed.

Preheat oven and fold in chocolate chips

Preheat oven to 175°C. Fold in about 1 cup of chocolate chips. Save the rest for topping.

Prepare loaf pan and bake

Line or grease a loaf pan and pour in the batter. Sprinkle remaining chocolate chips on top. Bake for 60 minutes, loosely covering with foil halfway through to prevent over-browning.
