filet mignon (room temperature)

garlic (crushed)

Instructions
Prepare the steak
Remove filet mignon from refrigerator 30 minutes before cooking to bring to room temperature. Pat dry with paper towels.
Season the steak
Generously season both sides of the filet mignon with salt and freshly ground black pepper.
Sear the steak
Heat olive oil in a heavy pan over medium-high heat. Place the seasoned filet mignon in the hot pan and sear for 2-3 minutes without moving to develop a golden crust.
Flip and baste
Flip the steak and add butter and crushed garlic to the pan. Tilt the pan and baste the steak with the melted butter and garlic for 2-3 minutes.
Rest the steak
Remove the filet mignon from the pan and let it rest on a plate for 5 minutes to allow juices to redistribute before serving.
