Instructions
Prepare strawberry filling
Combine diced strawberries, sugar, and cornstarch in a bowl. Let sit for 10 minutes to release juices.
Cream butter and sugar
In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Mix dry ingredients
In a separate bowl, whisk together flour, baking powder, and salt.
Combine wet and dry ingredients
Gradually add dry ingredients to wet ingredients and mix until just combined. Do not overmix.
Scoop and shape cookies
Scoop dough into balls and place on a parchment-lined baking sheet. Gently flatten each ball.
Bake cookies
Bake at 180°C for 12-15 minutes until edges are lightly golden. Let cool on the baking sheet for 5 minutes.
Make cream cheese topping
Beat cream cheese, powdered sugar, and vanilla until smooth and creamy.
