Instructions

Make lemon syrup

In a pot, combine 2 lemons juiced and zest, 50g sugar and 200ml water. Bring to boil and simmer 5 minutes.

Strain the syrup to remove any lemon zest bits

Prepare lemon cream

In a bowl, whisk 4 egg yolks with 100g sugar until pale and thick. Add 500g mascarpone and juice and zest of 3 lemons.

Storage

Fridge: 2 days
Reheat: Serve chilled

Best eaten within 2 days. Store in airtight container in the refrigerator
