Slice the onion
Thinly slice the onion using a mandolin or sharp knife.
Form beef balls
Divide ground beef into four 4oz (113g) balls.
Prepare burger sauce
Combine mayonnaise, ketchup, mustard, Worcestershire sauce, pickle juice, smoked paprika, garlic powder and onion powder in a bowl.
Heat the pan
Heat cast iron or stainless steel pan on medium-high heat for 2-3 minutes until water beads up when splashed on the surface.
Place beef balls on pan
Place beef balls on hot pan, season generously with salt and pepper.
Smash the patties
Place a small handful of sliced onions on each ball, then smash down firmly with a spatula to create thin patties.
Cook first side
Cook undisturbed for 2 minutes until a deep brown crust forms on the bottom.
Flip and add cheese
Scrape patties from pan, flip over, immediately add cheese slices and place top bun followed by bottom bun on top to steam.
Melt the cheese
Cook for 1-2 minutes until cheese is fully melted and buns are lightly toasted.
Assemble burgers
Remove buns, spread sauce on both halves, add pickles and the cheesy beef patty, then serve immediately.
