Sour Watermelon Rind Candy

watermelon rind (peeled, cubed)

Instructions
Prepare watermelon rind
Cut watermelon rind into 1cm cubes, removing any pink flesh and green skin.
Make sugar syrup
Combine sugar and water in a pot and bring to a boil, stirring until sugar dissolves.
Cook watermelon rind
Add watermelon rind cubes to the boiling syrup and reduce heat to maintain a gentle simmer. Cook for 45-60 minutes until rind becomes translucent and syrup thickens.
Add lemon juice and citric acid
Stir in lemon juice and citric acid. Continue cooking for another 15-20 minutes until mixture reaches desired chewy consistency.
Cool and shape candy
Remove from heat and let cool slightly. Drop spoonfuls onto parchment paper or shape into small pieces while still warm.
Coat with citric acid
Once completely cooled, roll candies in remaining citric acid for extra sour coating.
