Cut watermelon rind into 1cm cubes, removing any pink flesh and green skin.

Combine sugar and water in a pot and bring to a boil, stirring until sugar dissolves.

Add watermelon rind cubes to the boiling syrup and reduce heat to maintain a gentle simmer. Cook for 45-60 minutes until rind becomes translucent and syrup thickens.

Stir in lemon juice and citric acid. Continue cooking for another 15-20 minutes until mixture reaches desired chewy consistency.
