Fish Pie
Ingredients
Fish Filling
white fish fillets (skinless, boneless)
500 g
milk
400 ml
butter
30 g
onion (finely chopped)
1 piece
plain flour
30 g
frozen peas
150 g
fresh dill (chopped)

salt
1 tsp
black pepper
0.5 tsp
Potato Topping
potatoes
800 g
butter
30 g
milk
100 ml
salt
1 tsp
Instructions
Prepare potatoes
Peel and cut potatoes into chunks.
Cook potatoes
Boil potatoes in salted water until tender.
Poach fish
Place fish in a pan, cover with milk and gently poach until cooked.
Make sauce base
Fry onion in butter until soft, add flour and stir to make a roux.
Finish filling
Gradually add poaching milk to roux, stir to thicken, then add peas, dill and seasoning.
Mash potatoes
Drain potatoes, mash with butter, milk and salt.
Assemble pie
Place fish and sauce in baking dish, top with mashed potato.
Bake pie
Bake in preheated oven at 200°C until golden and bubbling.
