Instructions
Prepare ingredients
Bring butter and egg to room temperature. Chop chocolate into small pieces.
Mix dry ingredients
In a bowl, whisk together flour, baking soda and salt.
Cream butter and sugars
In another bowl, beat butter with granulated and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until fully combined.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture and mix until just combined.
Make chocolate ganache
Heat cream until simmering, pour over chopped chocolate. Let sit 1 minute then stir until smooth.
Chill dough
Cover dough and chill in the fridge for 20 minutes.
Shape cookies
Scoop dough into balls and place on a parchment-lined baking sheet.
Bake cookies
Bake in a preheated oven at 180°C for 10-12 minutes until edges are set.
Cool and fill
Let cookies cool completely. Pipe or spoon ganache onto half the cookies and sandwich with the remaining cookies.
