Prepare the fruit

Wash and thoroughly dry strawberries or other fruit. Skewer 3-4 pieces onto each bamboo skewer.

Make the sugar syrup

Combine sugar and water in a saucepan. Heat over medium heat, stirring until sugar dissolves, then stop stirring and let it boil until it reaches hard-crack stage (150°C / 300°F).

Do not stir once boiling to prevent crystallization.

Coat the fruit

Quickly dip each skewer into the hot syrup, rotating to coat evenly. Let excess drip off, then place on parchment-lined tray to harden.
