Crispy Potato Sticks

potatoes (boiled, mashed)

cornstarch

garlic powder

fresh parsley (chopped)

black pepper
0.5 tsp
Topping
parmesan (grated)
30 g
fresh parsley (chopped)
1 tbsp
chili flakes
1 tsp
Instructions
Boil and mash potatoes
Boil the potatoes until soft, then mash them thoroughly.
Mix with seasonings
Add cornstarch, garlic powder, chopped parsley, salt and black pepper to the mashed potatoes and mix until well combined.
Spread and freeze
Spread the potato mixture into a thin, even layer on a tray or baking sheet and place in the freezer for 1 hour.
Cut into sticks
Remove from freezer and cut the firm potato layer into sticks.
Fry until crispy
Heat oil in a pan or wok and fry the potato sticks in batches until golden and crispy on all sides.
Add toppings and serve
Transfer to a plate and top with grated parmesan, chopped parsley and chili flakes. Serve immediately.

Best eaten fresh. Reheat in air fryer or oven to restore crispiness. Do not microwave.
