German Potato Salad
Tangy, creamy, and insanely easy potato salad perfect for lunch
This German potato salad is made with just 6 potatoes, red onion, pickles, and pantry staples. Quick and delicious!

Instructions
Prepare the potatoes
Wash 6 medium potatoes thoroughly. Place them in a large pot, cover with cold water, add a pinch of salt, and bring to a boil.
Cook bacon and chop vegetables
While potatoes cook, chop red onion and pickles finely. Cook bacon in a pan until crispy, then remove and chop, reserving bacon fat.
Drain and slice potatoes
Drain cooked potatoes using colander. Let cool slightly, then slice into 1/4-inch thick rounds while still warm.
Make the dressing
In the same pan with bacon fat, add olive oil, vinegar, grainy mustard, salt, and pepper. Heat gently while whisking to combine.
Combine and serve
In a large bowl, gently toss warm sliced potatoes with chopped onion, pickles, chopped bacon, and warm dressing. Garnish with chives and serve warm or at room temperature.
