Instructions
Prepare equipment and ingredients
Preheat the oven to 180°C and grease two ramekins or muffin cups.
Melt butter and chocolate
Combine butter and dark chocolate in a heatproof bowl and melt gently over simmering water or in short microwave bursts.
Mix wet ingredients
Stir sugar into the melted chocolate mixture, then add the egg and vanilla extract.
Add dry ingredients
Fold in flour, cocoa powder and salt until just combined. Do not overmix.
Bake the brownie cups
Divide the batter between the two prepared ramekins and bake for 18–20 minutes until the tops are set but the centers remain slightly gooey.
Cool and serve
Allow to cool for 5 minutes before serving warm or at room temperature.
