Instructions
Preheat oven
Preheat the oven to 160°C. Prepare a 20×20 cm square baking pan lined with parchment paper.
Melt chocolate and butter
Melt the chocolate and butter over a double boiler, then set aside to cool slightly.
Whip eggs and sugars
In a bowl, whisk the eggs with brown sugar, granulated sugar, and vanilla extract until frothy, then gradually add olive oil while stirring continuously.
Add dry ingredients
Sift in the flour, cocoa powder, a pinch of salt, and corn starch. Mix gently with loose but firm movements, then fold in a handful of chocolate chips.
Bake the brownie
Pour the batter into the prepared pan, smooth the surface, and bake at 160°C for 40-45 minutes. The center should remain slightly soft.
Finish and serve
While still hot, sprinkle with chocolate chips and coarse salt. Once the chocolate has melted and the brownie has cooled, cut into squares and serve.
